If
you struggle with the strong flavor of beef liver, you may find
chicken livers much easier to enjoy. Plenty of people who don’t
care about the health benefits will still seek out a good plate of
southern fried chicken livers or simple, gourmet
chicken
liver pâté. They’re not difficult to prepare, either. Simply
thaw in the fridge or hot water, rinse, dry, and cook. At the
simplest, sauté them in butter and fresh garlic until cooked
through, then add plenty of salt and pepper, a squeeze of fresh
lemon, and a sprinkle of parmesan.
Chickens have a superpower: turning weeds and bugs into delicious, nutritious meat. We rotate our birds frequently to fresh ground, where they excitedly chase bugs and strip plants down to the stem.
