Well, to be honest, they’re not ribs! Here, a chunk of pork shoulder—arguably the most delicious meat for slow cooking on any animal, anywhere—is sliced through the bone to create strips very much like ribs, but more meaty.
Low and
slow is the key here. Whether you choose a slow cooker, smoker, Dutch
oven, or regular oven, you’ll get an incredibly tender and juicy
result with 4-6 hours of low, moist heat. Keep it going until they slide easily off the bone. Finish by basting
the ribs with your favorite sauce and crisping them up briefly under
the broiler or on the grill.
